Green Chili Chicken Casserole Recipe

 This recipe came from the grocery store called HEB based in Texas. I am so glad that I am still able to fix this recipe. The reason for me saying this is that I thought that I could only get the Green chili stew mix from this store. I am now able to buy the mix at KingsSoopers. Above is what you will need to make this recipe. You need 1 jar Texas Two-Step Green Chili Stew Mix, 26-oz Bag cooked Fajita Thighs- chopped ( I use what ever I have on hand whether it be chicken or turkey), 1 10-oz. bag Tortilla chips, and 2 cups shredded cheddar or Mexican blend cheese.
 Preheat oven to 400 degrees. In a bowl, mix together chicken, chips, and green chili stew mix. Spread evenly in a 9x13 pan and top with shredded cheese. cover with foil. Bake for 30 minutes till cheese is melted and edges are bubbling. Serve with sour cream, avocado and/or pico de gallo.
I served this with Spanish rice and corn. We also scoop this up with extra chips. The boys love this dish so I am so glad I can still make it for them. Please give this a try and let me know what you think. Until next time enjoy your day.

Pork Chops with Suit-Yourself Sauce Recipe

 I got this recipe from the book called Fix-It and Forget-It. Here are the ingredients you will need for this recipe.
 I made the sauce up first. You will need 1 cup of BBQ sauce. This is optional but it does taste great. Use your favorite brand and flavor.
 I put the sauce into a measuring cup to mixing easier. You will need 1/2 cup of water.
 To the BBQ sauce you will need 1 can of cream of soup. Any flavor and brand will work. I used Cream of Chicken because that is what I had.
 Mix it up.
 Now you will need to salt your pork chops or you can skip this part. I used 4 boneless chops.
 Now pepper to taste.
 You will need to brown your chops in 2 Tablespoons of olive oil.
 I browned two at a time.
 Put the brown chops into your crock pot.
 Pour on some of the sauce mixture.
 I put the last two on top.
 I put the rest of the sauce over them. Now cover and cook on low for 4-5 hours or until chops are tender but not dry.
I served this with potatoes and corn. This was a good change for us and we loved it. Hope you give this a try. Let me know how it went.

Pizza Pull-Apart Sliders Recipe

 I got this recipe from thecountrycook.net. Here is everything to put the sliders together.
 You need to brown your sausage. Preheat your oven to 350 degrees
 While the sausage is browning start getting the rest of your items together. You will need 1 package of dinner rolls. I used the Hawaiian style rolls.
 you will need to slice the rolls in roll while they are still connect together.
 place the bottom half of the rolls into a greased 9x13 pan.
 you will need to spread your pizza sauce over the bottom of your bread. I used the Kroger brand. The recipe says to use 3/4 cup of sauce. That is a lot of sauce and I didn't use that much. You use how ever much you like.
 You will need sliced mozzarella cheese. The recipes says you will need 12 slices.
 I used 5 slices on the bottom.
 Next you will layer the pepperoni on top.
 Now your cooked sausage. The recipe calls for 1/2 cip. I did double this recipe so I used all of the one pound of sausage.
 Now you place more cheese. I ran out of mozzarella so just used American.
 Put on the top half.
 Now for the buttery topping. I didn't not double this. I just used what she used. We aren't into the coating as much.
 You will need to melt 1 stick of butter, I used 1/2 stick. Then add 1 tablespoon of parmesan cheese.
 I lied I did cut the seasoning down. She wants you to use 1 teaspoon of garlic salt and 1 teaspoon of onion powder. I used only 1/4 teaspoon of each.
 The recipe calls for 1 teaspoon of oregano and again I only used a 1/4 teaspoon.
 I did use the 1/4 teaspoon of red pepper though. We do like it to have a little kick.
 Here is everything in a bowl.
 Mix it together and spread on top of the sliders.
 It should look like this.
 Now cover with tin foil and bake for 15 minutes in the oven.
 This is what it looks like. We used a spatula to get them out of the pan. They were hot.
The kids loved them. This is all we ate for dinner. It was a different way to have to pizza.

Creamy Chicken Stuffed Shells Recipe

 I am using the recipe from creativelyhomespun.com. I had to make changes to this recipe. I will note where I made the changes as I get to them. The first change is that I used a pork stuffing mix because it is what I had on hand.
 Here it is getting ready to be prepared. Preheat oven to 350 degrees.
 You will need 4 cups of chopped cooked chicken. I used some leftover chicken from previous meals.
 Here it is being prepared.
 You will need to put the chicken into a bowl. I had a little more than 4 cups. I just used all the chicken that was in my refrig.
 To that you need to add the prepared stuffing.
 1/2 cup mayonnaise.
 Add that to the bowl.
 Mix it all together. I used just a little bit more mayo.
 Here is where the big difference starts to happen. I had some jumbo shells in my freezer from a previous recipe. Well, when I pulled them out I realize my container had a hole in it and most of my pasta was freezer burn. Note freezing jumbo shells isn't a plan.
 So what I did was take the good pieces and layer them at the bottom of my 9x13 dish.
 I then added the chicken, stuffing mixture on top. To do it right you will fill the shells and then place them into the pan.
 Now you need to make the sauce. You need 1 can of cream of chicken soup.
 Put that into a bowl.
 2 cups of milk.
 Add to the same bowl.
 mix it all together until smooth.
 Pour over the mixture in the 9x13 pan. I made little indent in my dish to get down between the layers. Pour the sauce over top of the shells in the regular recipe.
 Cook uncovered for about 30 minutes or until heated thru and brown on top. Same cooking time for normal recipe.
I served French beans with it. This wasn't bad but I should have reduced the milk for the sauce since I had to change the recipe a little bite. Please give this recipe a try either the original or mine.
