This recipe makes a lot. Again I can't remember where I got this recipe. You will need the following items.
2 pounds ground beef
1 cup chopped onion
1 cup ketchup
1/2 cup mayo
1 tablespoon Dijon mustard
1 1/2 teaspoon salt (optional)
2 cups shredded swiss cheese
2 cups shredded sharp cheddar cheese
1 (16 oz.) package penne pasta, cooked and kept warm
1 cup panko (bread crumbs)
10 slices bacon, cooked and crumbled
1. Preheat oven to 350 degrees. Spray a 13x9 baking dish with nonstick spray.
2. In a large skillet, combine ground beef and onions. Cook over medium heat until beef is browned and crumbly. Drain well. Add ketchup, mayo, mustard and salt. Stir well. Stir in cheeses and then add pasta, stirring to combine.
3. Spoon mixture into prepared baking dish. Sprinkle with panko and bacon.
4. Bake for 20-30 minutes or until heated through.
** Note: You can make it ahead and freeze up to 1 month. Thaw overnight in the refrigerator and bake as directed in Step 4. This may take a little longer depends on your oven.

Loaded Baked Potato Casserole Recipe
This is a great recipe and everyone but Aryan likes this dish. Aryan doesn't like because of the potatoes and cooked broccoli that are in it. I got this recipe off the internet and I can't remember who I got it from. Again I will give you the basic recipe and at the end I will tell you what I did to make it my own.
You will need the following.
6 slices bacon
2(24 oz.) pkg refrig. mashed potatoes
1/2 (8 oz.) pkg. cream cheese
3/4 teaspoon black pepper
3 1/2 cups shredded rotisserie chicken breast, divided
2 cups shredded cheddar cheese, divided
1 cup chopped green onion, divided
1(12 oz.) pkg. fresh broccoli florets, divided
1. Preheat oven to 375 degrees. Spray a 13x9 baking dish with nonstick cooking spray. Prepare bacon according to package directions. Drain on paper towels and crumble. Peel back film at corner of each package of potatoes to vent. Microwave on HIGH for 3 minutes.
2. In a large bowl, combine potatoes, cream cheese and pepper, beat at medium speed with a mixer until combined. Stir in 1 3/4 cups chicken, 1 cup cheese, 2/3 cup green onion, half of the broccoli and half of the crumbled bacon. Spread mixture in the prepared dish. Sprinkle with remaining 1/3/4 cups chicken, remaining broccoli, bacon and cheese.
3. Cover and bake for 45 minutes or until cheese melts and casserole is heated through. Sprinkle with remaining 1/3 cup green onion.
* Here are the changes that I made. I don't buy premade potatoes, I make my own. I did try the premade potatoes the first time I made this and they were salty. It isn't that hard for me to mash my own potatoes. As normal I also don't measure anything out. I also used the dark meat of the chicken. I had about 4 cups this time. I didn't shredded the chicken this time I just cubed it. For crumble bacon, I cut it up first then cook it. For me it is easier this way. The recipe says that it will serve 6 people. This dish serves more than 6 because it fills the dish to the top and is packed. This is an all in one dish.

Corn Chowder Recipe
This recipe I got of Betty Crocker Cookbook. I made this on a very cold and snowy day. It is a fast recipe and you can change up it up to suit your taste. I usually always double this. I will give you the basic recipe that I followed. You will need the following items.
1/2 pound bacon, cut up
1 medium onion, chopped (about 1/2 cup)
2 stalks celery, chopped (about 1 cup)
2 tablespoons all-purpose flour
4 cups milk
1/2 teaspoon salt
1/8 teaspoon pepper
1 can cream style corn
1 can tiny white potatoes, diced
snipped parsley
paprika
Cook bacon in 3-quart saucepan until crisp: drain. reserving 3 tablespoons fat in saucepan. Cook and stir onion and celery in bacon fat until onion is tender: remove from heat. Stir in flour. Cook over low heat, stirring constantly, until mixture is bubbly; remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in salt, pepper, corn, and potatoes; heat through. Stir in bacon. Sprinkle each serving with parsley and paprika.
* Here are the changes that I made. I omitted the salt because the bacon is salty. I added the parsley into the pot at the same time I added everything else. I let who ever wanted paprika to add their own. This is really good on cold snowy day.

My Week ( January 28th - February 3rd)
I am trying something new on my blog. I want to see what you think. I know this is such a great picture to start with but when you have teenage boys what do you expect.
On Monday the 28th it ended up snowing but not for very long. In fact it was almost melted by the time Mike picked up David from school. Monday mornings are the days I usually go grocery shopping. For dinner I made BBQ chicken rollup and we had coleslaw with it.
Tuesday the 29th Mike and I went to Country Kitchen for an early lunch when we were running errands. We also had a parent/teacher conference with David's teachers. Also that night we had all 4 of our missionaries over for dinner. I made a stew because it has been cold and I could throw it into the slow cooker. Okay now for the picture. On Wednesday Mike worked overtime and after visiting with David's teachers on Tuesday I looked through his room for missing school work. This is what I found in his closet. I won't even mention what was in his dresser drawers or under his bed.
This is his closet after I cleaned it. You can actually walk into his walk-in closet. Later on it was my turn to carpool the boys with a neighbor to a church young men activity. We did eat leftover goulash for dinner. Before I worked on his closet I had my nails done and my hair cut.
This is all the trash from his room. I was lucky enough to be able to get into the trash can before the trash man came and picked up the trash. It took me two days to clean his room. So this is on Thursday.
3 boxes and a plastic container full of stuff to take to the thrift store. We did get after him for the mess in his room and gave Aryan a heads up bout me going through his room next. We had leftover stew for dinner.
Friday was a busy day. All week I have been getting up at 5 am. David had a dental appointment at 8 am to get filings done. After his appointment I ran some more errands. For those who don't know the boys don't have school on Fridays, so I make a lot of their appointments on this day. When I got home I sliced up mushrooms to dehydrate. We bought two big containers from Sam's club. We don't eat the mushrooms. We grind them up and mix them into the dog's food. Later in the day I felt myself getting a little drained so decided to not go to my crochet club or the activity we were having at the church.
My dehydrator only has five trays so it took two days to dry all the mushrooms. For dinner on Friday David wanted chicken noodle soup for dinner which was fine with me because I wasn't feeling well and that sounded good.
This is what they look like when they are dry. On Saturday I woke up with a sore throat but I still had a few things I needed to do so I couldn't let it slow down much. I had cookies to bake for the up coming school week lunches. Mike again worked some overtime as he did the day before. I put a roast in the slow cooker to make into BBQ Beef. Today I didn't get up until 6:30 am though.
Sunday feeling really bad. My throat is killing me and I was moving slow. Mike was off so he actually cooked breakfast. All I had to do was peel the potatoes. I always work on my planner for the upcoming week on Sundays. I didn't go to church because whatever I have I don't want to spread around. I did start feeling better near the end of the day. Mike and the boys went across the street to a friend's house for the Super Bowl. I stayed home and read. We just had leftovers. My weeks very on what happens and sometimes I have to change things around, like cleaning David's room. That was not on my to do list for the week. Also there were a lot of errands being done this week, more than normal. I didn't mention it but I did a load of laundry every day. I also am involved with the DAR and was doing some work for them.

Stitch Fix Review
I have heard a lot about this mail order company so decided to give them a try. You pay a $20 fee to have them pick out the items for you. You answer a lot of questions to make sure that they give you a proper fit.
This is how the items come in the mail and they even send you a prepaid return envelope to return items you don't like.
My box came with five items for the winter.
The first item I tried on was this hoody. It is loose and comfortable. I have already worn it twice. It is also light weight. I paired this with a pair of fleeced work out pants.
This top was the next item I received. I have to wear a cami under it because it is a little low cut for my taste. It is 3/4 sleeve and comfortable. I paired it the with jeans shown below. It is also loose fitting. I don't like my clothes to cling to my body.
The jeans fit right but are a little long. That isn't their fault. I am short and finding a pair of jeans to fit in length is hard. I have a pair of gray booties that I wear with them to help with the length so I don't have to roll them up.
This hooded cardigan is light weight and comfortable. I just have with me for a light throw.
The one picture I just realized I didn't add is the turtle neck long sleeve shirt. It is the shortest of all the shirts that I received but it is okay. I really don't like turtlenecks but I decided to keep it just in case we have a really cold day.
The box came with an a card on how to wear each outfit. I decided to keep all the items because you were given a discount and they $20 fee was also taken off the price of the items. I didn't have a problem with any of the clothes not fitting but the items were a bit out of my price range to continue using them. Christmas 2018
Christmas 2018 was a quite day for the Payne household. This is our tree before the gifts not wrapped are put underneath it. Kismet loves the tree and I have to replace ornaments every now and then.
The unwrapped gifts are now under the tree. We didn't have the stockings put up this year so I just put the stocking stuffers into a gift bag. Kismet is investigating the gifts.

Also Mike and I bought ourselves some really good knifes for our together gift that is also missing from the pictures.
It was a nice day and the kids enjoyed all of their gifts.

Tara's Wedding
Right after I went to Ohio for H's baptism I flew to Connecticut for Tara's wedding. I don't have a lot of pictures yet I still need to order some from the photographer but I do have a few that I thought you might like to see. This one is of the three girls. Tara let her bridesmaid pick their own dresses as long as they were the right color.

Sorry about my Dad's hand in this one. John is waiting with his groomsmen with the pastor. It was a great day for a wedding. Tara put a lot of work into this day. She made a lot of the center pieces and the boutonnieres that the guys wore. She also made her own bouquet. It was different and made very well. We all had a blast and enjoyed ourselves very much. One of my granddaughters said she wanted a wedding like this minus the wine. All of the family was there for her big day.
