This recipe I got from a cook book that I borrowed from the library many years ago. I can't remember the name of the book. I just know it was about Thomas Jefferson so my children have nicked name this recipe the Thomas Jefferson rice. I did have to change this up a little but I will include the correct way to do this recipe along side my changes.
For this recipe you will need 2 slices bacon, cut finely; 1 can peas; 1 small onion, chopped; 1 cup cooked rice; 2 tablespoons grated cheese; salt and pepper to taste. These are the changes I made I used left over rice which was about two to three cups. Frozen peas that I had left over and about five pieces of bacon left over. (Having left over bacon is very rare in my family). I didn't use an onion because I had other plans for it.
I just used my kitchen scissors and cut up the bacon.
Since my bacon was already cooked I had to put some bacon grease in a pan so I could fix this meal.
Here is where you would sauté the onion and bacon together until the bacon was crisp.
I then put in my cold cooked rice and slowly warmed it up.
I then added the bacon.
Then the peas. In the recipe after you sauté the onion and bacon you add the drained peas, rice, grated cheese and seasonings. Since everything I had was cold I just slowly added each one and warmed it up first.
I like cheese and of course added more than called for. You will toss together in the frying pan and moisten with liquid from the peas if needed.
This is what it will look like. You ca use this as a side dish or complete meal.

Chocolate Crinkle Cookie Recipe
These are my favorite cookies. I only make them once a year because I don't need them around the house because I can't stop at one. I don't know where the recipe came from I just know I got it from mom.
These are the ingredients you will need for this recipe. That is homemade vanilla in the bottle.
1/2 cup butter, cut up; 4oz unsweetened chocolate; 2 cups flour; 2 teaspoons baking powder; 1/2 teaspoon salt; 2 cups sugar; 4 large eggs; 1 1/2 teaspoons vanilla extract
2. Combine the flour, baking powder and salt in a medium bowl.
1. Melt the butter and chocolate; until smooth. Set aside to cool slightly. Note: I didn't have unsweetened chocolate so I used semi sweet.
Beat the chocolate mixture and granulated sugar in a large bowl.
Add the eggs, one at a time, beating well after each addition.
Then beat in the vanilla.
Beat in flour mixture just until combined.
Refrigerate at least 2 hours, until dough is very firm. I always let it refrigerate overnight. The dough will be soft before you put it in the refrigerator.
3. Preheat oven to 350 degrees. Grease your cookie sheets. Place 1 cup of powder sugar in a bowl. Drop chilled dough by teaspoonfuls onto sugar and roll into balls. This is very messy so I use gloves. I also use a cookie scoop. Place balls 2 inches apart on the prepared cookie sheets. Not like I did above. The cookies ended up going together and I had to cut them apart so they ended up being square. I was in a hurry to get a lot of things done on this day.
Bake them 10-12 minutes, until the tops are just set. (Don't over bake). Cool the cookies on cookie sheets 1 minute, then transfer them to a wire rack to cool completely. Makes about 5 dozen.
This sheet I spaced them correctly and they came out great. Square cookies were still good.

Ginger Molasses Spice Cookies Recipe
Here is yet another recipe. This cookie recipe the boys really don't enjoy because it has ginger in it. They aren't a fan of ginger. I got this recipe from a small little recipe book by Wilton. For this recipe you will need the following:
2 cups all-purpose flour; 1 1/2 teaspoon ground ginger; 1 teaspoon baking soda; 1/2 teaspoon salt; 1/2 teaspoon ground cinnamon; 1/2 teaspoon ground cloves; 1 1/4 cups sugar, divided; 3/4 cup (1 1/2 sticks) butter, softened; 1/4 cup molasses; 1 egg
1. Preheat oven to 375 degrees F. Combine flour, baking soda, salt, cinnamon, ginger, and cloves in medium bowl.
2. Beat 1 cup sugar and butter in large bowl with electric mixer ( I did this by hand) at medium speed until light and fluffy. Add molasses and egg; beat until well blended. Gradually beat in flour mixture at low speed just until blended.
3. Place remaining 1/4 cup sugar in shallow bowl. Shape by 1/2 teaspoonfuls into balls; roll in sugar to coat. Place 1 inch apart on ungreased cookie sheets. As you can see my balls are a little bigger since we like bigger cookies.
4. Bake 7 to 8 minutes or until almost set. Cool cookies on cookie sheets 2 minutes; remove to wire racks to cool completely.
This is what the final product looks like. I couldn't keep Mike away from them as they were cooling.

Fruit Turnover Recipe
I am back with another recipe. I received this recipe from my mom. She got it from one of the school's she used to work at when I was growing up. All you need for this recipe is flour tortilla's, any can of pie filling and melted butter. Cinnamon and sugar if you use apple or cherry pie filling.
Preheat your oven to 350 degrees. Brush the inside of the tortilla lightly with the melted butter. Add about 1-2 tablespoons of pie filling in the middle. Sprinkle with cinnamon/sugar if using apple or cherry filling. Fold up the sides then roll. Brush top with more melted butter.

Bake for 15-30 minutes in the oven. You want them to be golden brown. These took 30 minutes. I only made four because I just used up leftover pie filling from another recipe. My boys love these and they are real easy to fix.

Project update
As I stated earlier this year I said I wanted to finish up some projects. The photo above is the first step to get caught up on my canning. This is 14 quarts of hamburger that I did yesterday. I still have to can some chili and tomato sauce. Maybe later I will can some more beans. This makes it easier for the boys to fix something to eat if Mike and I are away for the night or day.
The other projects I am working on are two different afghans that I started last year and haven't finished yet. I am four rows away from being done on one which is a gift so I won't be putting up a picture. The other one is a lap blanket for the veterans home and I will post that picture when I am finished.
That is all I have been working on so far this year. Hoping to get more done soon.

Homemade Maple and Brown Sugar Oatmeal Packets
My boys love instant oatmeal but it can get pricey. Lucky for me they like the off-brand name. I decided to make my own and they like this just as well. I will put a link below to the two YouTube channels I watched that gave me this idea and recipe. Everything you need is in this picture.
10 cups quick oats (4 cups ground up); 1 1/2 teaspoon salt; 1cup non dairy creamer or dry milk; 1 cup brown sugar.
Mix all together.
I use snack size bags to make individual portions or you can use small mason jars.
Put 1/2 cup mixture into each bag and than add 1 tablespoon each maple sugar and brown sugar. You don't have to add the extra brown sugar but my boys like it a little more sweet and it makes it like the store bought ones. To serve you just empty the bag into a bowl o mug and add 6 oz. of hot water. My boys use the Keurig for this and just use the small cup button.
I just store the bags in plastic containers and put on top of the frig. The boys know to place the empty bags back into the container.
I use Organic Maple Sugar from Frost Ridge Maple Farm. You can get this off Amazon for $9.99. The bag is 8 oz. and I use two bags. This recipes makes between 40-50 bags.

2020 Goals
I am not one for making New Year Resolutions but I did have a few goals in mind that I would like to accomplish this year.
1. Try to work out five days a week but will be happy with 3 days. Some days are busier than others and I don't want to force myself to achieve this goal but want to feel good about myself.
2. Try to finish off project I have started and that have been sitting around gathering dust.
3. To post at least once a week on this blog.
4. To have more fun and go places I want to see.
See there aren't many goals but these are the ones I want to try to accomplish this year. I will keep you posted on how I am doing. So far so good.
