Curried Beef Recipe

Here is another favorite of ours. I got this recipe from a book but can't remember which one all I do remember is that it wasn't a cookbook.

 This is everything that you will need for this recipe.
1 pound or more of beef, either stew meat or round steak cut into bite-sized chunks. ( I did mine in strips)
1 small onion, chopped ( I used dried onions rehydrated)   1 small apple. chopped
4 or 5 mushrooms. sliced ( We don't do mushrooms)   2 cloves garlic (or to taste), minced (not showing but used)   vegetable oil   1/4 teaspoon turmeric (optional, I used)
1/2 teaspoon dry mustard   1 tablespoon flour (you may need more)
1/4 teaspoon black pepper   1 cup stock (I used a teaspoon of beef bouillon dissolved in 1 cup water)
1 teaspoon curry powder (at least)  pinches of dried parsley, sage, thyme (optional)
1/4 cup raisins  1/2 banana, mashed ( I didn't one so didn't add this time)

 Sauté beef until well browned. Set aside.
 Sauté onion, apple, mushrooms, and garlic in small amount of oil.
 When tender, add turmeric, mustard, pepper, and flour, stirring with the other sautéed ingredients and adding more oil, if needed, to make a paste.
 When paste is hot and bubbly,
 add stock, curry powder, other spices if desired,
 and raisins, stirring to make a smooth sauce.
 Add meat.
 Heat gently until thick. Add mashed banana 10 minutes before serving.
Can be served with couscous for a Moroccan-type meal, or with plain rice. Even with noodles, if that's what you do best. As you can see I served it with rice because my family really isn't into couscous.
This is a great meal but I would advise you to eat it one setting because it doesn't do well reheated.

Pound Cake Recipe

Here is another recipe for you to try. I got this recipe from Betty Crocker's Cookbook page 69.
I made this cake for Strawberry Shortcake that Aryan wanted.

 These are the items you will need to make this recipe.
2 3/4 cup sugar        1 1/4 cup butter, softened        1 teaspoon vanilla
5 eggs           3 cups all-purpose flour         1 teaspoon baking powder
1/4 teaspoon salt           1 cup evaporated milk
NOTE: Do not use self-rising flour
 Heat the oven to 350 degress. Grease and flour 12-cup bundt cake pan or tube pan (10x4 inches).
 Beat sugar, butter, vanilla, and eggs on low speed, scraping bowl constantly, 30 seconds. Beat on high speed, scraping bowl occasionally, 5 minutes. Beat in flour, baking powder and salt alternately with milk on low speed.
 Pour into pan. Bake until wooden pick inserted in center coms out clean, 70-80 minutes. Mine only needed to bake for 60 minutes. I would check after 60 minutes and then time as needed.
 Cool 20 minutes; remove from pan.
Here is the strawberry shortcake. It was delicious.
For the strawberry mixture all I did was cut up my strawberries and added some sugar and let it set in the refrig. until I was ready for it.

Lemon Chicken With Thyme Recipe

This is a recipe that I fixed many time. It is simple to make. I got this recipe from Extra-Light Cooking.

This is the only picture I took. I just got ahead of myself.
These are the items that you will need to fix this dish.
3 tablespoons flour; 1/2 teaspoon salt; 1/4 teaspoon pepper; 4 skinless, boneless chicken breast halves ( 1 pound total); 2 tablespoon olive oil; 1 medium onion; 1 tablespoon butter; 1 cup chicken broth; 3 tablespoons lemon juice; 1/2 teaspoon thyme; lemon wedges (optional); 2 tablespoon chopped parsley (optional).

1. In a plastic or paper bag, combine the flour, salt and pepper and shake to mix. Add the chicken and shake to coat lightly. Remove the chicken and reserve the excess seasoned flour.

2. In a large skillet, warm 1 tablespoon of the oil over medium heat. Add the chicken and brown on one side, about 5 minutes. Add the remaining 1 tablespoon oil, turn the chicken and brown well on the second side, about 5 minutes longer. Transfer the chicken to a plate and set aside.

3. Coarsely chop the onion. Add the butter to the skillet. When the butter melts, add the onion and cook, stirring, until softened, 2 to 3 minutes.

4.  Stir in the reserved seasoned flour and cook, stirring, until the flour is completely incorporated, about 1 minute.

5. Add the broth, 2 tablespoons of the lemon juice and the thyme and bring the mixture to a boil, stirring constantly.

6. Return the chicken to the skillet, reduce the heat to medium-low and cover the skillet. Cook until the chicken is tender and opaque throughout, about 5 minutes.

7. Divide the chicken among 4 plates. Stir the remaining 1 tablespoon lemon juice into the sauce in the skillet and pour over the chicken. Serve the chicken with lemon wedges and a sprinkling of parsley, if desired.

I served this baked potatoes and corn. I know that is a lot of carbs but that is what my family likes.
I used 2 big chicken breasts and sliced them in half.

Sour Crem Coffee Cake Recipe

Here is a different type of recipe. Again I don't remember where I got this recipe to give the credit to the right person.

 This is what you will need to make this recipe.
1/2 cup butter, softened; 1 cup sugar; 1 teaspoon vanilla extract; 2 cups all-purpose flour; 1 teaspoon baking powder; 1/2 teaspoon baking soda; 1/4 teaspoon salt.
Topping: 1/4 cup sugar; 1/3 cup brown sugar; 1/2 cup chopped pecans
 I almost forgot these you will also need 2 eggs and 1 cup sour cream.
 Combine flour, baking powder, baking soda, and salt.
 Combine all topping ingredients.
 Preheat oven to 325 degrees. Cream together butter and sugar.
 Beat in eggs, sour cream and vanilla.
 Add the flour mixture to the creamed mixture and beat until combined.
 All mixed together.
 Pour half of the mixture into a greased 9x13 baking pan. There is no pouring this mixture. I had to drop it in and then spread it with a knife or spatula.
 Sprinkle topping mixture on top of batter.
 Add the remaining batter and bake for 40 minutes. Again the batter was a little hard to spread so take your time.
I ended up baking this for 50 minutes.

The boys love this with cool whip. You can't taste the sour cream. I hope you give this recipe a try and let me know what you think.

Beef with Snow Peas Recipe

This recipe is quick and good. I don't know where I got it so again I can't give credit to the original person. I hope you give this recipe a try and let me know what you think.

 This is what you will need for this recipe.
1/2 cup low-sodium soy sauce, plus more ( I didn't need any more than the 1/2 cup)
3 tablespoon sherry ( you can use broth or water)
2 tablespoon packed brown sugar
2 tablespoon cornstarch
1 tablespoon minced fresh ginger ( I used dried)
1 1/2 pound flank steak, trimmed of fat ( I used top round)
3 tablespoon peanut oil ( I used olive oil)
8 oz. snow peas, ends trimmed
2 cups cooked white or jasmine rice
Red pepper flakes, for sprinkling ( I forgot this)
 Slice the meat very thin against the grain.
 In a bowl, mix together the soy sauce, sherry, brown sugar, cornstarch, and ginger to make a marinade.
 Place the sliced meat in a bowl and pour half the marinade on top. Toss with your hands and set aside.
 Heat the oil in a heavy skillet or wok over high heat. Add the snow peas and stir them around for 1 minute.
 Remove to a plate and set aside.
 Let the pan get very hot again. Add half the meat to the pan and spread it out, but do not stir or disturb it for at least 1 minute. Turn meat to the other side and cook for 30 seconds more. I cooked the meat all the way through. We don't like any red.
 And remove it to a clean plate. Repeat with other half of the meat.
 Return all the meat to the pan and pour in the rest of the marinade. Stir it around, then pour in 1/2 cup hot water...and let the sauce thicken for 30 to 45 seconds.
 Turn off the heat and stir in the snow peas. Let them warm up a little.
Then serve the mixture over rice, with red pepper flakes sprinkled over the top as desired.

Slow-Cooked Pork Chops Recipe

Saturday I made this dish. I got this recipe from the Fix-it and Forget-It cookbook.
 This is what you will need for this recipe.
1/2 cup flour
1 teaspoon salt
1/2 teaspoon garlic powder
6-8 lean pork chops ( I used 5 but you can use whatever you need for your family)
10 3/4-oz. can of chicken and rice soup, divided
 Sorry about the picture but this is showing that you add the flour, salt and garlic powder together.
 Dredge pork chops in the flour mixture.
 Heat a non-stick skillet until hot. Then place several chops in skillet and brown on both sides. Do this in batches, rather than crowding the skillet. As you finish browning the chops, place one layer in the slow cooker.
 Top with a proportionate amount of the soup. Finish browning the meat, add it to the cooker, and top with the remaining soup. Cover and cook on Low 6-8 hours or High 3-4 hours.
I served it with left vegetable  and cheddar cheese rice. I have roasted cauliflower on my plate and the men ate peas.

Baked Chicken and Spaghetti Recipe

Not much going on in my life right so I am going to post yet another recipe. I don't remember where I got this recipe so I can't give the credit to the right owner. I also forgot to take a picture before we dug into the dish.

This recipe was just enough for my family of four, with two of them being teenagers.
For this recipe you will need the following items.
10 oz. cooked and drained spaghetti noodles
1 onion, chopped
1 can tomato sauce ( the recipe didn't give a size)
2 tablespoons sugar
1/2 cup grated cheese
dash of pepper
2 tablespoons shortening or butter ( I used butter)
2 cups diced cooked chicken

Sauté onion in butter, add tomato sauce (don't go light because it will be dry), sugar and pepper. Heat to boiling, stir in chicken and spaghetti. Toss gently with fork. Pour into greased baking dish and sprinkle with cheese. Bake at 375 degrees for 20 minutes.

Everyone liked this dish. Even David who doesn't like spaghetti. He ate two helpings.

Pork Chops and Apple Slices Recipe

Here is another recipe that we tried this week. I am using the recipe from Fix-It and Forget- It page 124.

 This is what you will need for this recipe. 4 pork loin chops, about 1' thick, well trimmed
2 medium-sized apples, peeled, cored, and sliced
1 teaspoon butter
1/4 teaspoon nutmeg. optional
salt and pepper
one small onion, chopped, optional
 Heat a non-stick skillet until hot. Add chops and brown quickly. Turn and brown on the other side.
As you can see I left the skin on and I chopped the apples instead of slicing them.
 While chops are browning, place half the sliced apples in the slow cooker.
 Top with 2 chops.
 Chopping left over onions.
 Place some of the onions on top of the 2 chops. Repeat the layers.
 Dot with butter and sprinkle with nutmeg. Sprinkle generously with salt and pepper.
Cover and cook on Low 6-8 hours, or until meat is tender but not dry.
Here is the pork with the sides. My slow cooker cooks fast so the time was off for me. My chops ended up being a little dry. It was good but I need to make sure I don't cook for that long.
