There is no wrong way to make fried rice. I am just showing you how I make it. The basic recipe came from one of my Dad's friend wife. We have never been able to make it like her's but we keep trying. I make this recipe when I need to clean out my fridge. So my basic ingredients are carrots which are always fresh and diced, same with the green onions. Then I had some leftover peas, corn and green beans. I did chop up the green beans a little. I had some leftover beef and chicken which I chopped into little pieces. I also scrambled up about 6 eggs. Next you will need to cook your rice however much you like and let it get cold. The best way to do this is fix it the night before. I sometimes forget to do this and try to fix it early in the morning. I also use sesame oil and soy sauce. I don't buy the package flavoring. I make sure everything is ready to go before I turn on my skillet.
I don't own a wok so I just use one of cast iron skillet's. This means I have to do several batches but that is okay. I just put the oven onto the lowest setting and have a big pan in ready to my finished rice in. I heat up the skillet and then some oil and then the fresh veggies. I let them cook for a little. I still like my fresh veggies to have a little crunch to them.
Next I add the other veggies to my skillet and let them heat through.
Then I add my eggs and meat.
Lastly I add the rice and soy sauce.

I made up three cups of white rice and with the other added items it almost filled this pan.

Conex
I haven't done a good job on getting this post up. We needed a storage shed and it has to be big because we have a lot stuff. The property didn't have a shed on it so we had to figure out what to do. We had a friend across the street order a used Conex to storage their stuff as the build a new house and we decided to do the same thing. We were going to build our own but the rules wouldn't give us the size we needed and you had to jump through so many hoops to get things done.
Here are a few pictures of the Conex being delivered. It was really interesting and fun to watch. The thing about getting this is that it won't raise our property tax because they consider this a vehicle.

Here is the inside. Mike is adding shelves so we can put things up in an orderly manner.
The front have is getting some insulation.
We divided the Conex in half. The back half isn't getting insulation. We put in a door to separate the two halves.
We also put in a door at the opening because it is too hard for me to open if I need something out of it. Both of the doors lock. When we go on vacation we lock the doors and close the outer doors.
We are glad that we went this way because everything is secure. If you are needing a place to store your things I would strongly encourage you to go this way if you have the room. They are a little pricey though. If you want you could paint it to make it look better. I really don't care because you really can't see it from the street. Until next time enjoy your day.

Lentil Soup Recipe
This is an original recipe that Bekah made up years ago. There really isn't a recipe to follow. This never comes out the same every time we make it. No matter what we add or omit it comes out tasting great. So onto the recipe for this pot of soup.
I used a whole bag of dried lentils. Make sure you rinse and go through them to remove little rocks and twigs. I used 8 hot dogs sliced. I used 1/2 medium onion, chopped. 2-3 ribs of celery, chopped, about a handful of baby carrots, diced, 2.5 quarts beef broth and the following herbs parsley, basil, thyme, marjoram, salt and black pepper. I throw it all together into the slow cooker and let it cook on low all day. I would guess the amount of herbs I used would be about a tablespoon of each. Salt maybe a 1/2 teaspoon and about a teaspoon of black pepper.

Mac 'N Beef Recipe
I am not sure where I got this recipe. I like this one because again it is fast and easy. Pictured above is everything you will need for this recipe. 1 pound of hamburger; 1/2 cup chopped onions ( I used dried onions); 1 can tomato soup; 1 minced garlic clove ( I used 1 heaping teaspoon of minced garlic); 1/2 can water; 1 tablespoon Worcestershire sauce ( or as much as you like); 2 teaspoons of prepared mustard; generous dash black pepper; 2 cups cooked elbow macaroni ( 1 cup uncooked)
In a 10 inch skillet cook beef and onion until beef is browned and onion is tender, stirring to separate meat. Spoon off fat. Add remaining ingredients. Heat through. Serves 4
I served it with some wax beans. This is a quick meal and good.

Teriyaki Chicken Recipe
This is the last recipe I got from my friend. She taught a class for the women of our church and this was one of the recipes. Again I am not sure where she got it. What you see above is everything you will need for this recipe. I made a few changes and I will tell you what those are after the original recipe. For this recipe you will need the following. 3 chicken breasts, cut into bite size pieces; 1 cup teriyaki sauce; 1 cup water; 2/3 cup brown sugar; 3 cloves garlic, minced; a few sprinkles of ginger. Now for the changes. I just used two big chicken breasts and I didn't cut them up. I also used the whole 10 oz. bottle of teriyaki no reason to save just a little.
Here you see how everything looks before I turn on the slow cooker. You will cook this on low for 4-6 hours. You can also throw everything into a freezer bag and freeze it.

David's 8th Grade Graduation
On Thursday the 30th of May David Graduated from 8th grade. Here is a small video of the eighth graders walking into the gym. I didn't realize that they had started so I missed a few of the kids.

Split Pea Soup Recipe
I know it is almost summer time and it's getting to be to hot for soups. For us I makes soups any time of the year to use up items in the refrig before they go bad. I am basing this recipe from the Betty Crocker's cookbook. What you see in the photo is the basic of this soup. I usely don't measure anything for a soup but do a lot of judging and tasting until I am happy. I will give you the measurements from the book and directions. You will need the following.
8 cups of water; 1 pound dried split peas; 2-pounds smoked ham; 1 medium onion, chopped; 1 teaspoon salt; 1/4 teaspoon pepper; 2 medium carrots, cut up; 2 medium celery stalks, cut up.
Heat water and peas to boiling in Dutch oven. Boil two minutes; remove from heat. Cover and let stand 1 hour.
Stir ham, onion, salt, pepper into peas. Heat to boiling; reduce heat. Cover and simmer until peas are tender, about 1 hour. Skim fat if necessary.
Remove ham, trim fat and bone from ham. Cut ham into 1/2 inch pieces. Stir ham, carrots, and celery into soup. Heat to boiling, reduce heat. Cover and simmer until vegetables are tender, about 45 minutes.
Now for how I actually did it. I had a ham bone left over from dinner so I boiled that in some water along with salt, pepper and some bay leaves. I had that simmering for about 3 hours. When I was happy about how the broth look I turned off the burner and removed the bone and let the bone cool. As the bone cooled down I added the package of dried peas and brought it to a boil. Once it came to a boil I lowered the flame and let it simmer. After about 45 minutes I added the onions, celery, carrots and what ever ham I could remove from the bone. I also removed the bay leaves. I let this simmer until the peas were soft and mushy. I added some ham flavoring that came with the dried peas. I still had to add more salt because my ham didn't have much flavor.
This is what it looks like. Doesn't look very good but it taste greats. I hope you will give this recipe a try. Let me know what you think.
