Bringing in the house

 Here are the pictures of them bringing in the home. The pictures were taken from across the street at our friends house.
 They had to bring in each half separately of course. Took most of the day.
 Likely the yard is wide open so they had plenty of room. The orange dumpster belongs to the neighbors.

Set together but not connected. It is a four bedroom with a family room. It is 1794 square feet. The wood post that you see is a fence in process for our dogs.

building our new home

 Yes we are now moved and have closed on our new home. So now I can write about it. This was a long process and a nightmare but it is over and done with. There will be several posts with pictures so you can see what was done. This picture and the next one were taken from a friend who lives across the street. This shows them digging for a foundation and the septic we had them put in. Unfortunately there isn't sewer out in the area we live.

 As you can tell the septic system is going in and there are three huge leach lines. They took up about a quarter of the back yard. We do have an acre of land.

 This is a new style septic tank. It is suppose to be better than the concrete ones. It is sized for a four bedroom house.
The foundation for the home. We wanted a permanent foundation  for the manufactured home we  are putting onto the land.
So these are the first photos for you to enjoy.
I will post more again later. Don't know when because we moving in and getting our other home ready to sale.

Breakfast Goulash

Here is another recipe I would like to share.
This recipe is actually something Mike makes a lot. This time I made it. We call it breakfast goulash. You can eat it as is with or without cheese or you can roll it up in a tortilla.
This dish has breakfast sausage browned, we use 1 pound.
Fried potatoes from the night before.
8 eggs (2 eggs per person)
You can add items if you would like.
I cook the eggs separate and then add them to the sausage/potato mix.
This gives us a couple of breakfasts for the four of us.
Hope this helps with ideas. Breakfast is not my favorite meal so I always have trouble to figure out what to fix.

Broccoli Cheese Soup

I know it has been a while since I have posted anything so I have decided to do another recipe.
This is my favorite soup recipe. I got this recipe from my mom and I don't know where she got it from. So if this recipe is familiar to anyone thank you it is great.
You will need:
1 cube butter                                                  1/2 teaspoon onion salt
1/3 cup flour                                                  2 cups milk
1 can evaporated milk                                   2 cups broccoli, cut up
3 teaspoon salt ( I only put in 1)                   1 cup cheese (I put in more)
1/2 teaspoon pepper

Melt butter in large pot stirring constantly. When melted, add flour until mixture is thick. Add both milks, salt, pepper, and onion salt. Stir constantly (on medium high) until boils. Add broccoli and cheese and stir until cheese melts. Great with bread bowls.

I always double this recipe. I used unsalted butter and as you see I also cut the salt down because it is salty with all that salt. I like mine a little bit more cheesy so I add more.

Hot and Tangy Broccoli Beef

It has been a while since I have shared a recipe. I am not sure where I got this recipe so wanted to let everyone know this isn't my recipe. I did make it my own. So here is the recipe.
 1-2 pounds boneless beef cut into thin strips.
1 tablespoon cornstarch
5 tablespoons soy sauce, divided
1 heaping teaspoon of minced garlic
1/2 teaspoon sugar
roughly 1 pound of fresh broccoli flowerets
4 teaspoons cornstarch
crushed red pepper flakes
vegetable oil
1 medium onion, thinly sliced
2 teaspoons rice vinegar

Combine the meat with 1 tablespoon of cornstarch, 3 tablespoons of soy sauce, sugar, and garlic in a bowl, stir and let stand for about 10 minutes.
Meanwhile prepare flowerets into bite-size pieces.
Combine 1 cup water, remaining soy sauce, 4 teaspoons cornstarch and crushed red pepper flakes in a small bowl. Set Aside.
Heat about 1 tablespoon of oil in a large skillet over medium to high heat. Add beef and stir-fry until it is the way you like it. Remove from pan.
Heat about another 2 tablespoons of oil in the same pan that you cooked the beef. Add broccoli and onion; stir-fry for about 2 minutes. Sprinkle about 1 tablespoon of water over the vegetables; cover and cook until the vegetables are the way you like them. Stir occasionally.
Add beef and the soy sauce mixture; cook and stir until sauce boils and thickens. Remove from heat; stir in rice vinegar.
I serve this over rice.
You could use chicken or pork instead of the beef and you can also add other vegetables if you like. You can also omit the red pepper flakes if you want but we like our a little spicy.

Christmas Coffee

 I know that this is a lot late but I did want to post this anyway. The second Saturday in December The Arkansas Valley DAR Chapter host their Christmas Coffee. At this coffee we raise money for the scholarship we try to hand out in May. This scholarship goes to a college student who is getting a degree in history. We have a great time and just enjoy ourselves. All the items you see in the photos were donated to us by local business for the auction we hold. We all had a blast.
 These two items were donated by a member to be auctioned off.
 Here are the snacks that everyone shared in bringing . Lots of good food.

Last few days of January pantry challenge

The last days of January were a little hard for me to come up with meal ideas. My Menu plan wasn't filled in all the way so I had to do some thinking. I only remembered to get a couple of photos. Pictured above was what we had for dinner on Sunday the 28th. I made broccoli cheese soup. Aryan doesn't like this kind of soup so he ate leftovers.

On Monday the 29th I did a slow cooker meal. I made a basil Swiss steak meal. We put it over white rice and asparagus for the vegetable. I was surprised that the boys took more than one spear of asparagus. They like the pine nuts that I added. Not a whole lot the pine nuts since they are expensive just enough for flavor.
Tuesday the 30th I roasted a turkey breast. I wanted to do my Cajun turkey breast but didn't realize that the breast I bought was already seasoned. I never buy preseason items. So that will be another day. I made mashed potatoes with gray and peas to go with it.
Wednesday the 31st I baked up some beef tenderloin fillets with macaroni and cheese with roasted broccoli. 
Today the 1st of February we just did left overs because I had a meeting. 
This was a great opportunity for me to get back into meal planning and to use what I already had. I had fun.
