David Track

 This is David's last year of track for middle school. He will be in high school next year and is looking forward to doing track for the high school. Here they are getting ready for the meet. They jog a lap and then stretch out.
 Here he is getting ready for one of his events. He mostly does relays. The events for these photos were 4 x 200 relay and he is on the JV team being the 4th runner, 4 x 100 relay and he is on the varisty team as the 3rd runner, 4 x 400 and again the varsity team as the 4th runner and finally the 800 medley relay again the varsity team and he runs the 2nd 100 meter.
 Here he is nearing the end of one of his events. I honestly can't remember which race this one was.

He has another meet again today. He will be doing the same events again. This means we stay for all the events. The 800 Medley is the last event of the day. It makes for a long night. He does enjoy doing this and we are proud that he enjoys it and is doing well. Soon we will know if he makes it to state.
I am trying to do better on keeping you updated but life does happen.

Slow Cooker Sweet and Sour Pork Recipe

 Back again with another recipe. I got this recipe from whoneedsacape.com
With both boys in track and having 2 to 4 meets a week I have been using my slow cooker a lot.
For this recipe you will need 1 1/2 -2 pounds cut pork loin (or boneless pork chops)
2-3 tablespoons flour (optional)
3 large green peppers sliced in half
1/2 cup white sugar
1 6oz can pineapple juice
1/4 cup rice vinegar
1/4 cup soy sauce
1 tablespoon ketchup

Instructions

1. Optional for a thicker sauce coat pork in flour ( I didn't do this step)
2. Spray slow cooker with non-stick cooking spray (I didn't do this I used a liner)
3. Place meat and green peppers in slow cooker
4. Mix together sugar and pineapple juice to dissolve sugar
5. Mix in rest of ingredients to sugar mixture
6. Pour over meat and peppers
7. Cook for 6-8 hours on low.
8. Serve over rice
9. Another option is to take out some of the liquid and thicken it on the stove (I didn't do this)
10. If freezing, place meat (covered in flour if you want) and peppers in bag. Follow steps to make the sauce and pour over. Freeze
* I added onions to this about half way through the cooking time. I also didn't buy a can of pineapple juice. Instead I used the juice off a can of pineapple that I used for another recipe.
Here it is all dished up. I added chow mein noodles.  I hope you give this recipe a try. I did pull this out of my freezer. It was a hit.

Roasted Broccoli Recipe

 Here is a recipe for a different take on broccoli. I got this recipe from Noreen's Kitchen. She has a you tube channel. I watch her all the time and has great recipes. Nothing is really measured because it depends on how big your family is and the amount you want to make. You will need fresh broccoli, olive oil, garlic and savory salt. I will also post how to make the salt. You mix all the items together in a bowl and toss. The amounts she used was 2 pounds of broccoli, 1/4 cup olive oil and 4-6 cloves of garlic.
 You will then place the broccoli onto a foil covered cookie sheet. Make sure the broccoli is not overlapping. You will bake this at 400 degrees until the broccoli is lightly brown.
I know it isn't a very good picture but this is what it should like. We love it. I also discovered you can do the same thing with cauliflower.
Here is the recipe for the  Savory Salt
1 cup kosher salt (table salt)               1 tablespoon dried marjoram
2 tablespoons black pepper                 1 tablespoon dried oregano
2 tablespoons dried parsley                 1 tablespoon dried basil
1 tablespoon rubbed sage                    1 tablespoon dried dill weed
1 tablespoon ground rosemary            1 tablespoon celery seed
1 tablespoon dried thyme                    1 tablespoon sweet papirika
1 tablespoon onion powder                 1 tablespoon garlic powder
place in a quart jar and shake to mix. Shake every time you use it. Great on eggs, baked potatoes, chicken before grilling.

Aryan's High School Track

 Aryan decided to do track again this year. He took last year off because he had a heavy load of classes. This year as a sophomore he went back to doing what he enjoys most and that is running.
 Here he is napping before his event. His event is the 4 x 400 and it is the last event of the day.
 Here is the event. It is hard to zoom in on him because I was sitting up a little ways and the sun is bright.

Coming to the finish.  Aryan is one of the shortest guys on his team so he has to run all out to stay up or even pass the other runners. He does give his all though. After his event because he has given his all he has made himself sick.
We are just glad that he wants to sports and he gives his all. We don't care if he wins or loses just that he finishes.
